Through innovative cultivation practices and processes, the farm has settled ahead the market trends, achieving a brilliant record in the Brazilian Cup of Excellent awards.
Sudan Rume: Sudan Rume is an exceptionally rare coffee variety that was discovered in the country of Sudan near its border with Ethiopia. This mutation of Bourbon with low-yielding and bursting tropical fruit flavors took the win with Sasa Sestic in the 2015 World Barista Championship. Like Geisha, this is a variety difficult to grow and quite complex in flavors.
Starmaya: A really unique coffee variety, the progeny of two parents: Marsellesa and CIR-SM01. Marsellesa (a Sarchimor line) was chosen for its resistance to coffee leaf rust and its organoleptic qualities. The CIR-SM01 was chosen as it doesn’t produce pollen. Planting them together ensures that the only pollen produced is coming from Marsellesa and, therefore will fertilize also CIR-SM01 plants. This fantastic natural cross-pollination was the creation of the new Starmaya variety. Wonderful acidity with delicate hints of herbal.
Ethiosar: A hybrid of the Ethiopian varietal Rume Sudan and Sarchimor. Those varietals are themselves hybrids. Rume Sudan is a Typica mutation out of Ethiopia. Sarchimor is a hybrid of Villa Sarchi, a natural dwarf mutation of Bourbon and Timor. This complex heritage means that there is a lot of genetic diversity in its makeup to offer not only disease resistance and yields but a complex and vibrant cup profile.
