You are about to enjoy one of our finest relationship coffees. Back in 2020 when we were trying to find the best competition coffee for Serkan Ipekli, our very own Founder and CEO, for his World Brewers Cup Championship we tried a lot of samples. Serkan traveled all over Colombia to meet with producers and to choose his competition coffee. Mauricio Shattah’s Finca La Negrita was one of these farms which he visited for consecutive years. Interestingly it was the same year La Negrita produced its first commercial harvest of Wush Wush, and Serkan fell for this amazing! Mauricio’s fondness for the variety is due to its high yield, high resistance, and high cupping scores. Morphologically, this variety characterized by open growth habit; long branches; wide internode length; and small number of primary branches.
It wasn’t only for this exotic variety but also a meticulous, innovative, and tailored processing method applied to his coffee, a Nitro Natural Process!
During this process, coffees go into a hermetic, stainless steel tanks that are provided with a degasification valve, with yeast added for 72 hours, in a climate-controlled dark room. The fermentation tanks are connected to a nitrogen bottle and periodically during the process they flush it with nitrogen in order to flush out gases produced such as Carbon Dioxide, which results in a cleaner cup final product.
This coffee is one of a kind and there’s only a very few quantity of it available.
La Negrita is located at 1780-2100 MASL, features four natural springs, rich volcanic soils, and permanently shade-grown coffee trees. Since the beginning, Mauricio has applied his scientific and medical background to produce coffee that is both unique and exemplary. In the past couple of years, La Negrita has become synonymous with quality and innovation and even a couple of world barista champions from all over the world used their coffees this year during the competitions.
The story of Wush Wush is quite interesting yet somehow complicated. Collectively, we know that it’s from Ethiopia, however, when talking about Wush Wush we may refer to completely different varieties with completely different pathways, sharing the same name!
