El Burro Estate, one of the southern-most coffee farms in Panama, part of the estate is inside the Baru Volcano National Park (BVNP). Coffee in this farm grows starting from 1550 up to 1800+masl, with mean elevation of 1,675masl, young volcanic soils, pristine forest, unique micro-climate, with different temperatures, winds, and precipitation than other farms of the region. Being inside the BVNP -A protected ecological reserve and sanctuary for exotic plants, birds, and mammals (like the tropical tiger), butterflies, provides many positive aspects that result in a distinguished cup of coffee.
The “A” stands for Anaerobic fermentation, which lets the carbon dioxide emitted by the fruits out of the tank and doesn’t let any oxygen in for 6 days. Then the fruit goes into drying beds for drying for more than 30 days, hence SD for Slow Dry. Resulting in a floral, sweet, tropical, and luscious coffee with reminiscences of passion fruit, cacao nibs, raisins, plum, and rum.
