FINCA DEBORAH - EPIPHANY GEISHA
Due to a great request from our dear customers for having the coffees of the Finca Deborah/Savage Panama Geisha set separately, we decided to introduce you their SOLO version. Now you can have them in 200 grams glass jars in our custom made Treasury Series boxes.
You can still enjoy them all together of course!
Now introducing from Finca Deborah, the Epiphany - Geisha
The Epiphany process starts with harvesting perfectly ripe Geisha cherries reading 21-24 on BRIX. The cherries are then carefully selected for a second time before processing. After second selection, the cherries are placed in hermetically sealed tanks for a period of time allowing for a mild anaerobic fermentation to take place, without a gas infusion. The cherries are continuously monitored and data cataloged over many hours inside the tanks. PH and temperature are the primary units carefully observed with ambient temperature also monitored and controlled to ensure consistency in the processing. After the required time inside the tanks, the cherries are removed then wet-milled to remove the skin and fruit leaving a clean grain to be dried. The washed coffee is then placed on shaded, raised, African bed system designed by Jamison. Direct sunlight is avoided as the intense UV and heat can cause cracking in parchment and damage to the grain. Temperatures, heat, and humidity are controlled inside the dry houses and are maintained within certain parameters.
