FAST ORIGAMI S
SPECIALTY COFFEE FILTERS
SPECIAL EDITION
The FAST ORIGAMI Special Edition is a filter with a dedicated design to provide the best brewing experience and geometry to fit perfectly with the Origami S dripper.
This filter provides higher drawdown speeds and higher extractions than our standard filter and for sure than the regular filters, it can be used by folding it like a regular FLAT Sibarist filter to provide low contact surfaces with the dripper and very fast drawdowns or shape the filter with a 2nd origami to block air channels and reach higher extractions with the original Origami and Trunk flatbed no bypass concept.
The amazing Origami and Trunk team have been involved in the development, providing guidelines and feedback until finally, we reached the perfect filter and their approval.

HOW TO USE
The Origami special edition filters are packaged in a flat stack with pre-folded creases for users to fold.
1. Fold the 4 edges of the filter following only the 8 deeper indentation marks on the paper, the 4 contour notches indicate these marks. It is not necessary to keep the flat bottom shape of the filter; you just need to go over the folds.
2. Place the filter on top of the dripper and press the central part of the paper downwards.
3. Rinse the filter, starting from the center and moving towards the outer edge by pouring hot water in a circular motion. Make sure that the entire surface of the filter is stuck to the walls of the dripper, without leaving any air channels between the filter and the filter holder.
The image shows how the filter should look before starting the infusion.
Now you choose:
(A)
Just brew.
If you want to minimize the contact surface between the filter and the dripper and a more continuous brewing volume
Or
(B)
Shape the filter.
Use a 2nd Origami dripper as a “negotiator” and increase the filter contact surfaces and reduce the air circulation.
To use a 2nd origami to shape the filter and increase the contact surfaces follow the indications below.
1. Take a 2nd origami dripper (the same size as the one used with the filter) and place it gently inside the 1rst dripper with the filter properly placed and rinsed.
IMPORTANT: Do not press the dripper down to avoid any filter scratch or braking.
2. Remove the 2nd dripper.
3. The filter is ready for brewing.
DETAILS
ORIGAMI SPECIAL EDITION, History
The Origami dripper is an icon for the Specialty Coffee industry, with an extraordinary design and a very good reputation within the Brewers Cup Championship, but the thing we like the most is the versatility of the filter when playing with filter-dripper contact surfaces depending on the filter used.
We started seeing people brewing with the FAST CONE and the Origami but also some baristas were brewing with our FAST FLAT with the Origami. This was new for us and we started testing with amazing results, the problem, it there was a gap to improve the filter due to the angle of the FLAT and Origami, the filter didn’t match due to the FLAT design purpose (flatbed drippers with narrow walls).
The partnership with the Origami team started during the exhibitions and brewers cup exhibitions, we have mutual respect and admiration for companies, finally, we decided that we should do something big together, a dedicated and perfect filter with the Sibarist technology for the unique and iconic Origami drippers, a perfect combo.
Our design team started the filter concept development, considering that we should reach the best possible drawdown flow with the highest extraction to provide a clean and very interesting cup, (yes a flatbed in a conical dripper, at this moment only one classic option is available…), going further than the boring flat bed results with standard papers, And of course, maintaining the iconic shape and properties of the Origami drippers.
First, we base our designs on a low contact surface dripper, just to be seated on top of the grooves and try to reach a plain brewing space avoiding bypassing reducing the contact surface, we made some tests and sent our photos to the Origami team. The Origami team has a lot of confidence with Yasuo san from Trunk Coffee, and he acted as the tester.
The initial thought of trying to reduce the contact surface was not 100% aligned with the Origami original sense of brewing of reducing the bypass by increasing the contact surface to block air gaps, so we started redesigning more and more. It was a manufacturing challenge to fill the Origami expectations, it is right, what you see in their products is exactly what they expect, the excellence in the design, quality, and results, something that as designers we love, but sometimes is an engineering and production problem.
Finally, we solved all the blocking points, and we got a solution to brew with the Origami S with no bypass using the reduced contact surface or the air block technique, thanks to our new Sibarist filter design. With a simple 4 folds solution and with the indentation pattern the user can just fold the filter like a regular FLAT filter reaching a perfect shape to be used with the origami, or then shape the filter with a 2nd Origami dripper as a “negotiator” to perfectly reach the maximum contact surfaces and block air gaps.
The resultant solution finally was approved by Origami and Yasuo san, and thanks to him we learned that there’s nothing impossible.
We hope all the specialty Coffee Community will enjoy this amazing filter and get the best extractions.
